Reducing food waste is therefore an effective climate action. It is estimated that food waste generates about 8 to 10 of global greenhouse gas emissions. Food waste is also a significant contributor to climate change. Since 2011, Ludovica has been a research consultant for the BCFN Foundation. Globally, more than 25 of food produced is wasted. Before that, she had been a research fellow with a project on food waste at the University of Roma Tre (2011-2013). During 2013-2014, she has been a visiting PhD student at the Institute for Community Health Promotion at Brown University (USA). She was a member of the Psychology of Eating and Consumer Health Lab at the Harvard School of Public Health for two years and co-managed a research project on healthy food consumption in collaboration with the HSPH. She has been working on food waste since 2011 her six year endeavour has already resulted in several publications and a PhD thesis, which focused on food waste behaviour in household consumption. Approximately one-third of all food produced for human consumption (1.3 billion tons of edible food) is lost and wasted across the entire supply chain every year 2. She holds a PhD in Management with a research interest in sustainable food systems and in particular in food waste behaviour. Food loss and waste (FLW) is recognized as a serious threat to food security, the economy, and the environment 1. Existing and proposed solutions at all three stages of household food metabolism are discussed.Ludovica Principato is a Post-Doctoral Research Fellow in the Business Studies Department at Roma Tre University, where she also teaches Food and Wine Marketing. 2 When food is discarded, animals are unnecessarily raised and slaughtered, chemicals are sprayed for no benefit, and land and labor are spent nourishing crops that never nourish. In the U.S., an estimated 25 percent of freshwater use is wasted producing food that is never eaten. Food wastage arises at all stages of the food supply chains for a variety of reasons that are very much dependent on the local conditions within each country. Wasting food is a misuse of valuable human and natural resources. Using the metabolic framework illuminates overlooked 'output' processes contributing to the environmental impact of household food waste including food sharing and food waste diversion. Food Waste Recovery: Processing Technologies, Industrial Techniques, and Applications, Second Edition provides information on safe and economical strategies. regional food mass flows of FAO’s Food Balance Sheets for the year 2007. The household food metabolism is characterized by inputs (e.g., food from gardening or retail), metabolic processes (e.g., food preparation, storage, eating, reuse), and outputs (e.g., donation of uneaten food, disposal of spoils and human waste).
